Tuna-stuffed jacket potatoes

Serve these tasty little morsels at your next dinner party and watch as they quickly disappear.

Ingredients

Method

1.Preheat oven to 200°C. Lightly grease a baking tray.
2.Boil or microwave potatoes for 8-10 minutes until tender. Cut tops off and carefully scoop out insides using a teaspoon. Reserve potato flesh. Arrange potatoes on a baking tray (you may need to slice the bottom from potatoes so they can sit flat).
3.Meanwhile, melt butter in a large frying pan on high. Sauté mushroom and garlic for 2-3 minutes until tender. Add tuna and spinach, and stir until spinach has wilted. Transfer to a large bowl. Cool slightly.
4.Blend in sour cream and cheese. Season to taste.
5.Spoon mixture into potatoes. Sprinkle with extra cheese. Bake potatoes for 5-10 minutes until golden. Serve sprinkled with chives.

Use reserved potato for mash, or drizzle with oil and bake until golden and crispy.
