Method
1.Preheat oven to 180°C (160°C fan-forced). Grease 8 x 1¼-cup ovenproof dishes.
2.Melt butter in large saucepan over moderate heat. Add onion and celery; cook and stir for 10 minutes or until onion is soft. Add flour; cook and stir for 1 minute.
3.Gradually stir in milk and cream; cook and stir until mixture boils and thickens. Remove pan from heat. Add corn, tuna and ¾ cup of the cheese. Stir until cheese melts.
4.Divide mornay between prepared dishes. Combine breadcrumbs and remaining cheese in a medium bowl. Sprinkle over tuna mixture. Bake for 20 minutes or until golden. Serve with salad, or cool completely to freeze.
Process 4 slices of day-old white bread to make the crumbs. To freeze: Wrap each dish in 2 layers of plastic wrap and one of foil. Freeze for up to 1 month. Thaw in fridge overnight.
