1.Mince the tripe, bacon, onion and potatoes.
2.Add mixed herbs, pepper and salt.
3.Bind with the egg.
4.For a party snack, roll into balls and then in flour, and deep-fry in oil in a large pot – when they rise, they are done.
5.For a meal and a healthier option, shape into patties and shallow fry.
