Method
1.Preheat oven to 200°C (180°C fan-forced). Lightly grease a 20cm square ovenproof dish. Heat oil in a large frying pan over moderate heat. Cook and stir onion for 8-10 minutes or until very soft.
2.Add tomato; cook and stir for 10 minutes or until mixture thickens slightly. Stir in sugar and basil. Season with salt and pepper.
3.Spoon mixture into prepared dish. Spread one side of bread with butter. Place bread in dish, buttered-side up, overlapping slices. Sprinkle with cheese. Bake for 30 minutes or until bubbly and golden.
Use regular white crusty bread. Replace basil with parsley. Basil can bruise easily – chop just before using. Use any leftover basil in soups, casseroles and dips.
