Method
1.Sift combined flours into a large bowl. Whisk in water and egg yolk.
2.Heat enough oil in a large saucepan to deep-fry, over high heat. Dip prawns into batter, allowing excess to drip off. Deep-fry in batches, 1-2 minutes, until golden. Drain on paper towel. Repeat with remaining prawns and batter. Serve tempura immediately with sweet chilli sauce.
