Method
1.Combine mangoes, apple and vinegar in a large heavy-based saucepan. Bring to boil on medium heat. Simmer, covered, for 8-10 minutes until tender.
2.Stir in the sugar, onions, raisins, chili flakes, cinnamon and salt. Simmer, uncovered, for 20 minutes, stirring frequently, until mixture is thick and glossy.
3.Spoon into hot sterilised jars and seal. Store in a cool, dry cupboard for up to 2 months. Keep in the fridge after opening.
To sterilise jars: Preheat oven to very slow, 100°C. Wash jars and lids in hot soapy water. Rinse well. Place in a large saucepan and cover with water. Bring to the boil, boil for 10 minutes, then use tongs to transfer to a baking tray. Place in oven until dry. Use warm jars immediately.
