Sweet and sour pumpkin

Although it was the Greeks who first brought honey to Sicily (along with wine and olives), the Saracens are credited with introducing agrodolce (sweet and sour flavours). They also brought citrus fruits and eggplants, which Sicily is famous for, and spices.

Method

1.Preheat oven to 200°C (fan forced).
2.Cut pumpkin into slim wedges. Brush pumpkin wedges with oil and season with salt and pepper. Put pumpkin in a large, shallow roasting dish lined with baking paper (makes cleaning easier).
3.Cook pumpkin for 20-25 minutes, until lightly golden and barely tender (don’t overcook as it softens a little as it cools).
4.Carefully transfer pumpkin to a serving dish. Have ready the garlic, sugar and vinegar mixed with ½ tsp of salt and plenty of pepper. Chop mint and add. Spoon over pumpkin.
5.Serve at room temperature garnished with mint leaves.
