Method
1.Using an electric mixer, beat cream cheese, sugar, cream and essence until smooth.
2.Combine jam and water in a microwave-safe bowl. Microwave on High (100%) for 20 seconds or until hot. Strain, discarding any solids.
3.Spoon l/4 teaspoon warm jam into base of each pastry case. Spoon or pipe cheese mixture into cases. Top each with a piece of strawberry. Brush strawberry with remaining jam. Serve.
Makes 12 Make ahead: Prepare cheesecake filling a day ahead. Cover, then chill. Reheat jam, if necessary, before brushing onto each strawberry.
