Spicy fish with spinach and yoghurt

In this tasty fusion dinner dish, tender flaky fish is pan-fried in a fragrant spice blend and served atop a bed of steamed spinach and rice. Add a dollop of yoghurt to cool down the meal, and create a wonderful text and texture experience, that can be prepared in under 30 minutes.

Method

Spicy fish with spinach and yogurt

1.Heat an oiled medium-size saucepan on medium. Cook onion 5 minutes, until soft. Stir in rice, until well coated. Stir in 3 cups water. Season to taste and bring to boil. Cover; reduce heat to medium-low. Cook 13-15 minutes, until water is absorbed and rice is tender.
2.Meanwhile, combine flour, cumin and coriander in a shallow bowl. Season to taste. Rub over fish.
3.Heat a lightly greased non-stick frying pan on high. Cook fish 2-3 minutes each side, until cooked through. Transfer fish to a hot plate; set aside. Cook spinach in same pan for 3-5 minutes, until wilted.
4.Serve fish with rice, spinach and a dollop of yoghurt on top.

If needed, add 1-2 tablespoons water to the pan to help cook the spinach.
