Method
Spiced potatoes
1.Place potatoes in a large saucepan. Cover with cold water: bring to the boil. Cook for 20-25 minutes or until tender. Drain; cool slightly. Peel; cut into 2cm-thick slices. Place in a large bowl.
2.Combine tamarind puree, yogurt, chilli, garam masala, coriander and 1 tablespoon water in a small jug. Season with salt.
3.Gently fold yogurt mixture into potato.
Tikka fish skewers
4.Combine yogurt, curry paste and lemon juice in a large shallow dish. Thread fish, onion and capsicum onto 8 skewers. Place in dish with marinade; turn to coat evenly. Cover with plastic food wrap. Chill for 1 hour to marinate.
5.Meanwhile, prepare Spiced Potatoes as recipe directs.
6.Preheat an oven-grill to high. Line a grill tray with foil. Spray skewers with oil; place on prepared tray. Grill for 5-6 minutes or until fish is cooked and vegetables are slightly charred; turn halfway through cooking.
7.Serve skewers with Spiced Potatoes.
Brush leftover curry paste over baked pumpkin wedges.
