Ingredients: 1/2 cup (125ml) lemon juice; 2 tablespoon caster sugar; 3 cup (500g) coarsely chopped watermelon; 1 1/2 cup (375ml) chilled sparkling mineral water

2 tablespoon caster sugar

3 cup (500g) coarsely chopped watermelon

1 1/2 cup (375ml) chilled sparkling mineral water

Method

1.In a small saucepan, combine juice and sugar; stir over low heat until sugar dissolves. Cool.

2.Blend or process watermelon, in batches, until smooth; strain through sieve into large jug. Stir in lemon syrup and mineral water; serve immediately.
