Method

1.Cook pasta in a large saucepan of boiling water for 8-10 minutes according to packet instructions. Drain well and return to saucepan.
2.Meanwhile, heat oil in a large frying pan on medium heat. Saute garlic for 1-2 minutes until fragrant. Add wine and bring to the boil. Reduce heat and simmer for 4-5 minutes, stirring occasionally, until reduced by half.
3.Add crushed tomatoes and cherry tomatoes. Bring to boil. Simmer, uncovered, for 8-10 minutes until thickened and cherry tomatoes are tender. Season to taste.
4.Add sauce to pasta in pan. Stir through most of the basil. Serve topped with ricotta and remaining basil leaves.

Add a little sugar to tomato- based dishes to cut acidity and enhance the flavour.
