Method

1.Cook spaghetti in saucepan of salted water for 7-8 minutes, or until almost al dente (firm but not hard). Pasta will continue to cook in sauce.
2.Cook mussel meanwhile, place second saucepan in high heat. Add olive oil, spring onions and garlic. Cook for 1 to 2 minutes. Add wine and mussel. Cover and cook for 3 minutes, then add tomatoes. Cook for further 1-2 minutes, or until mussels have opened.
3.Drain pasta and add to saucepan with mussels. Stir, then allow to soak up sauce for 1 to 2 minutes. Scatter over parsley leaves and toss to coat pasta. Drizzle on a little extra virgin olive oil, season with black pepper and serve immediately.
