1.In a saucepan of boiling water, blanch pork for 2-3 minutes, then remove and set aside.
2.In a wok or large frying pan, heat sugar and oil on low, stirring until sugar melts. Increase heat to medium, then add pork and cook, stirring occasionally, until browned.
3.Reduce heat to low. Add water, sake and sauce. Cover and simmer for 45-60 minutes until pork is very tender. Stir occasionally to prevent burning and add more water if mixture gets too dry.
4.Once tender, if there is still a lot of liquid, uncover the wok, turn up the heat and stir constantly until the sauce has reduced to a sticky coating. Sprinkle with sesame seeds, then serve with steamed rice and vegetables.
Note
- Stir-fry veges in a lightly oiled wok, adding harder ones first, for 2-3 minutes. Add a splash of stock, soy or oyster sauce to taste.
