Method

1.Preheat oven to hot, 200°C. Arrange oysters, in shells, on a baking tray.
2.In a medium bowl, combine cream and half the parmesan; season to taste.
3.In a small bowl, using an electric mixer, beat egg white until stiff peaks form; gently fold into cream mixture.
4.Top each oyster with 1 teaspoon of cream mixture. Sprinkle with combined remaining cheese and chives; bake 5-10 minutes, until golden and puffed.
