Ingredients

Smokey barbecue glaze

Method

1.

Preheat covered barbecue to moderate, 180°C. Place a wire rack in a roasting dish large enough to fit the ham.

2.

For the glaze: In a large jug, combine all the ingredients, whisking until smooth.

3.

Score a diamond pattern about 5mm deep all over ham fat. Place ham on rack in dish (see recipe tip below). If shank overhangs, wrap in tin foil. Pour water into base of dish.

4.

Brush one-third glaze over ham. Bake on indirect heat for 45 minutes, basting occasionally with remaining glaze and juices from pan.

5.

Remove ham from barbecue and rest for 15 minutes. Carve into slices to serve.

  • Buy large, heavy-duty disposable foil trays from supermarkets to cook the ham in. It saves on washing-up too!
