Method

1.To make the dressing, combine vinegar with a good pinch of salt in a bowl. Whisk until salt dissolves. Add oil gradually, whisking constantly, until mixture thickens. Check seasoning.
2.On a platter or individual serving dishes, arrange radicchio, grapefruit, potato, trout, walnut, basil and green onion. Drizzle over dressing and serve immediately.
