Method
1.Preheat oven to slow, 150°C. Line 2 oven trays with baking paper.
2.In a medium bowl, using an electric mixer, cream butter and sugar together until light and fluffy.
3.Sift flours and salt together. Using a butter knife, mix into creamed mixture until well combined. Turn out onto a lightly floured surface. Gather dough into a ball.
4.Divide in 2 equal portions and shape 2 x 18cm discs on prepared trays. Scallop edges and sprinkle sugar over.
5.Bake for 35-40 minutes or until golden and cooked through. Cool completely on trays. Cut or break into wedges. Store in an airtight container.
It is a good idea to mark 8 segments on the round with a knife before baking to make it easier to cut.
