1.Preheat oven to 220°C/200°C fan forced. Combine oil, chicken, seasoning and kumara on a large baking tray. Cover with foil. Bake for 10 minutes. Remove foil; bake for 15 minutes more or until golden and cooked.
2.Meanwhile, combine mayonnaise and dip in a small bowl.
3.Microwave vegetables on high (100%), in 1-minute bursts, until heated. Serve chicken and kumara chips with vegetabies and dip.
