Method
1.Whisk the eggs with the parmesan, thyme, cream and seasoning.
2.Heat about 2 Tbsp of oil and 1 tsp of butter to low-medium in a heavy-based frying pan.
3.Dip each slice of bread in the egg mixture, then let the excess drain off. Place bread in the pan and cook for 2-3 minutes each side until golden brown and toasted. Repeat with the remaining bread and egg mix.
4.Serve the warm toast with sour cream and sweet chilli sauce, then garnish with Parmesan and thyme.
