Method

1.Combine curry powder, soy sauce and sugar and divide between two shallow bowls. Add chicken to one and prawns to other. Toss to coat. Cover and refrigerate for at least 1 hour or overnight.
2.Preheat a chargrill or barbecue on high. Thread chicken and prawns onto skewers and brush lightly with vegetable oil. Cook chicken for 4 minutes each side, until browned and cooked through. Cook prawns for 2 minutes each side, until just cooked.
3.Pile pineapple onto centre of a serving platter. Top with chilli, onion and mint. Arrange skewers at each end and serve with satay sauce.

Thigh fillets are preferable to breast fillets because they are more moist when barbecued.
