Method
1.Bring a large saucepan of water to a simmer. Place whole potatoes in a metal steamer. Place steamer in saucepan. Cook, covered, 12 minutes or until tender.
2.Meanwhile, place a slice of prosciutto on each flattened veal steak; top with a sage leaf. Secure the prosciutto and sage with a toothpick.
3.Melt butter in a frying pan on high. Cook veal, in batches, 2-3 minutes each side. Set aside and keep warm.
4.Add wine to pan. Stir 2 minutes, scraping base. Season to taste. Spoon sauce over veal. Serve with potatoes and salad.
If you can’t find traditional good-quality veal steaks, either chicken breast cut into steaks, or pork fillets thickly sliced and flattened, can be prepared in exactly the same way. Veal has very little fat, so cook it briefly over high heat to prevent dryness.
