Salt and pepper prawns

These salt and pepper prawns look and taste fabulous. They are easily and quickly prepared and can be served as part of a casual seafood barbecue or as finger food for a cocktail party.

Ingredients

Method

1.Shell and devein prawns leaving tails intact. Thread each of the prawns onto a skewer lengthways.
2.Combine remaining ingredients in small bowl.
3.Cook prawn skewers on heated oiled barbecue (or grill or grill plate) over high heat until browned both sides and just cooked through. Sprinkle with half the salt mixture during cooking.
4.Serve prawn skewers with remaining salt mixture.

You will need to soak the skewers in water for up to one hour before using to prevent them scorching and splintering. Prawns can be peeled and skewered up to six hours ahead. Barbecue just before serving.
