Method

1.Spread half the capsicum and eschalot onto a large serving plate. Top with salmon in single layer.
2.Scatter over remaining capsicum, eschalot and dill. Drizzle juice and oil over. Season to taste. Chill covered, 1 hour. Serve on toasted bread.
