Switch your bacon for delicate, flaky smoked salmon and delight your dinner guests with this beautiful caesar salad. Topped with crunchy golden, soft-boiled eggs and a creamy, tangy sauce, this dish is a real family favourite.
1.Preheat oven to 180°C. Line a baking tray with baking paper.
2.Arrange bread slices on prepared tray. Brush with half of oil. Bake for 5 minutes. Turn over, sprinkle with grated parmesan, bake another 5 minutes. Cool.
3.To make dressing: place all ingredients in a food processor and process until well combined. Set aside.
4.Toss together lettuce, smoked salmon, avocado and green onions in a serving bowl.
5.Heat remaining oil in a small frying pan and fry capers until they burst.
6.Pour dressing over salad and toss well. Serve topped with croutons, capers, egg and cracked black pepper.
