Method
1.Preheat oven to 200°C (180°C fan-forced).
2.Spray a baking tray lightly with oil. Sift flour and ground ginger into a bowl. Add spread; rub into dry ingredients using fingertips.
3.Stir in dried fruit and caster sugar. Make a well in the centre of dry ingredients.
4.Add combined milk and egg. Mix to form a stiff dough.
5.Place mixture in small, rough heaps on prepared tray. Sprinkle with extra caster sugar. Bake for 10-15 minutes.
6.Transfer to a wire rack to cool.
To make your own fruit mix, combine sultanas, currants and chopped dates. You can also use chopped mixed dried fruit.
