Method
1.Preheat oven to 220°C or 200°C fan forced. Combine oil, garlic, ginger, honey in a large bowl. Season with salt and pepper.
2.Add carrots and toss until well coated in honey mixture.
3.Transfer carrot mixture to a large, greased, ovenproof dish or roasting pan. Roast, turning occasionally, for 20-25 minutes or until tender.
Replace honey with maple syrup, if desired. This recipe is a terrific way to get kids to eat carrots.
