Method
Raspberry lemonade spiders
1.Place sugar, water, lemon juice and raspberries in saucepan over medium-high heat. Bring to a simmer. Cook gently, 2-3 minutes, or until sugar has dissolved. Remove from heat and refrigerate until cold.
2.Strain cordial through sieve to remove pulp. Divide cordial into 8 glasses, spooning 1 1/2 tablespoons into each glass. Top with lemonade or soda water until glass is 3/4 full. Stir to combine.
3.Drop 1 scoop of ice-cream into each glass.
Equipment Small saucepan; fine sieve; 8 x 3/4-cup capacity serving glasses; ice-cream scoop; 8 straws; 8 parfait teaspoons
