Method

1.Microwave, steam or boil potatoes until tender. Drain, if necessary, and slice off tops. With a small spoon, gently scoop out inside of potato, leaving a thick shell. Set aside scooped-out potato for another use. Keep potato shells warm.
2.Meanwhile, toss chicken in seasoning mix to coat. Heat oil in a non-stick frying pan on medium. Cook chicken for 3 minutes, until lightly browned. Add 1/2 cup water and cook for 2 minutes, until sauce thickens.
3.Preheat a grill on high. Fill potatoes with chicken and top with cucumber, corn and tomato. Sprinkle with a little cheese and place under grill for 2 minutes, until cheese melts. Season to taste and serve.

Turn this into more of a meal by dicing the scooped-out potato and adding it to the cooked chicken for the filling.
