Ingredients

Method

1.Place noodles in a large bowl. Cover with boiling water and stand for 10 minutes. Drain.
2.Meanwhile, saute laksa paste in a large saucepan for 2 minutes on medium heat. Add fish stock, coconut milk and 5 cups water. Bring to boil. Reduce heat and simmer for 4 minutes.
3.Stir in fish and noodles and simmer for 3-5 minutes, until fish is cooked. Place beansprouts in serving bowls. Using tongs, transfer noodles from laksa to bowls. Ladle over soup and serve topped with coriander.
