Method
1.Preheat oven to moderate, 180°C.
2.With a sharp knife, cut chicken into pieces and remove skin. Place chicken in a casserole dish with tomatoes, beans and stock. Season to taste.
3.Cover with lid or foil and bake for 25-30 minutes, removing lid for last 15 minutes. Stir through olives and basil.
4.Meanwhile, cook rice following packet instructions. Serve chicken with rice and salad or beans.
