1.Preheat oven to 200°C. Spread pumpkin and chorizo on an oven tray. Drizzle pumpkin with oil and season to taste. Bake 15-20 minutes, until tender
2.Spoon combined pumpkin and chorizo into tart cases. Sprinkle with crumbled feta. Garnish with parsley to serve.
If liked, add some finely chopped canned beetroot during last 5 minutes of cooking.
