Prosciutto wrapped pork fillet

Method

1.Combine breadcrumbs, chopped sage and water in a small bowl.
2.Place prosciutto slices vertically on a board, slightly overlapping, to same length as pork fillet. Spoon breadcrumb mixture along centre. Top with pork and wrap with prosciutto to enclose. Use toothpicks to secure, if necessary.
3.Heat 1 teaspoon of oil in a non-stick frying pan on medium. Fry extra sage leaves 30 seconds. Drain on paper towel.
4.Add pork to pan; cook 3-4 minutes, turning, until browned. Add vegetables. Drizzle with remaining oil and season to taste.
5.Cover and cook 10-15 minutes, until pork is done to taste. Remove and set aside to rest in a warm place 5 minutes. Meanwhile, return vegetables to heat; continue to cook until golden and tender, if necessary, tossing frequently.
6.Cut pork into slices and arrange on serving plates with potato and zucchini. Top with fried sage leaves to serve.
