1.Heat a wok or large frying pan over moderately high heat. Add vegetable oil; swirl to coat surface. Stir-fry prawns, in batches for 3-4 minutes or until prawns curl and change colour. Transfer to a heatproof bowl.
2.Add ginger, chilli, garlic and choy sum to pan; stir-fry 1-2 minutes or until choy sum just wilts. Add prawns, sesame oil, oyster sauce and soy sauce; stir-fry for 1 minute or until heated.
3.Remove from heat. Add coriander and mint; toss to combine. Serve with rice.
