Method
1.Preheat oven to 200°C. Line a baking dish with foil.
2.Cut potatoes into wedges. Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin.
3.Combine skins and oil in bowl. Season to taste.
4.Place skin side up on wire rack in a baking dish. Bake 20-25 minutes, until browned and crisp. Turn over and sprinkle with cheese.
5.Increase oven to 220°C. Bake skins for a further 4-5 minutes, until cheese melts.
6.Combine all salsa ingredients. Mix well. Combine sour cream and chilli sauce in a bowl.
7.Serve potato skins with salsa and sour cream mixture for topping and dipping.
