Method
1.Cook potatoes in boiling salted water for 10 minutes, until just tender. Drain well.
2.Meanwhile, in a small saucepan, combine tomatoes, garlic, chilli and cayenne and season to taste. Heat gently, stirring.
3.In a frying pan, heat oil on high. Add potatoes and fry, stirring occasionally, for 5-10 minutes, until golden and crisp. Drain on paper towel.
4.Stir sage through tomato sauce. Add potatoes and toss to coat well. Sprinkle with sea salt and serve.
If preferred, potatoes may be tossed in oil and baked at 200°C for 35-40 minutes.
