This creamy, flavour-packed dip is a variation of the Greek skordalia and tastes delicious with bread or crackers.

Method

1.Cook potatoes in a saucepan of salted water on high heat for 7-10 minutes, until tender. Drain and mash well. Set aside to cool completely.
2.Place mashed potato in a bowl. Add mayonnaise and garlic. Mix well. Stir in lemon juice and season to taste. Serve with vegetables.
