Method
1.Place potatoes in a saucepan and cover with cold water. Bring to the boil on high and cook 8-10 minutes, until tender, adding beans for last minute of cooking time. Drain well and cool slightly.
2.To make dressing: in a small jug, whisk all ingredients together. Season to taste.
3.In a large bowl, combine potatoes, beans, onion, peppercorns and dressing. Toss to combine.
Serve a mixed salad of radicchio, frisee and red butter lettuce drizzled with lemon juice and extra-virgin olive oil, and a platter of char-grilled veg drizzled with balsamic.
