1.Sprinkle both sides of pork with polenta to coat lightly.
2.Heat 2 tablespoons of the oil in a large frying pan over moderately high heat. Add pork; cook for 2 minutes each side or until cooked. Transfer to a plate lined with paper towels.
3.Combine apple, vinegar, rocket and onion in a large glass bowl. Whisk remaining oil, mustard and sugar in a bowl. Pour over rocket mixture; toss to combine. Add parmesan; toss to combine. Serve pork with salad and lemon wedges.
To keep schnitzel warm between batches, place on a baking tray lined with baking paper in a pre-heated low oven until ready to serve. Use veal or chicken schnitzel instead of pork. Swap rocket for baby spinach, and parmesan for blue cheese. Price will vary.
