2.To make avocado and pineapple salsa; combine oil ingredients in a bowl and season to taste. Set aside.
3.In a small bowl, combine salt, chilli powder and allspice. Rub all over pork.
4.Heat a large frying pan with an ovenproof handle on high. Brown pork for 3-5 minutes, turning to brown all sides.
5.Transfer pan to oven and bake for 8-10 minutes for medium. Remove pork from pan and rest on a warmed plate, loosely covered with foil, for 5 minutes. Slice, serve with salsa and salad.
If you don’t have a pan that will go in the oven, simply wrap the handle of your pan in foil or transfer the pork to a foil-lined baking tray before baking.
