Method

1.Lightly oil a large frying pan and place over high heat.
2.In a large bowl, combine pork with oil, half the thyme and half the garlic. Turn to coat well.
3.In a small bowl, combine butter and anchovies with remaining garlic and thyme until a paste forms. Chill until required.
4.Transfer pork to the hot pan and cook for 7-10 minutes, turning, until cooked to your liking.
5.To make the salad, place asparagus, watercress, apple and walnuts in a large bowl. Add combined mayonnaise and lemon juice. Gently toss to combine.
6.Thickly slice the pork. Divide pork and salad among plates. Top pork with anchovy butter.

If preferred, roast pork at 200°C for 15-20 minutes until cooked to your liking.
