1.Preheat oven to 180°C. Lightly grease four 1-cup ramekins. Melt butter in saucepan on medium. Cook apple and onion for 4-5 minutes. Add sugar and mustard. Cook, stirring, 1-2 minutes.
2.Mix in flour. Cook 1 minute. Remove from heat. Gradually add cream, stirring. Return to heat. Bring to boil. Reduce heat to low and simmer 1-2 minutes. Remove from heat and stir pork, potatoes, peas and sage through. Season.
3.Divide between ramekins. Cut a sheet of puff pastry in quarters. Cover each dish with a pastry square. Brush with beaten egg. Pierce tops. Bake 15-20 minutes, until golden.
