Method
1.In a large bowl, combine pork, raddichio, rocket, peaches, pine nuts, mint.
2.To make the orange dressing; whisk together all ingredients in a jug. Season to taste. Toss through salad just before serving.
Use nectarines or mangoes, or a mixture of cold Christmas meats in the salad, if preferred.
