Papaya salad
Method
1.Pour water and wine into a medium frying pan. Add onions, parsley and peppercorns. Bring to a simmer.
2.Add chicken (liquid should almost cover fillets) and reduce heat to low. Poach gently for 8-10 minutes. Turn heat off and set aside for 20 minutes, until cooked through (turning if liked).
3.Transfer chicken to a plate lined with paper towel to drain. Cool.
4.Prepare Papaya Salad; in a jug, whisk together lime juice, oil, chillies and sugar. Slice chicken thinly and transfer to a bowl. Add remaining ingredients and toss dressing through just before serving.
