Pine nut crusted veal

Golden, crispy and wonderfully nutty, this pan-fried crusted veal steak is absolutely wonderful served with a creamy mash and steamed greens. Prepare this quick, gourmet dish for dinner in under 30 minutes.

Ingredients

Method

1.Place pine nuts in a food processor or blender and pulse to coarsely chop. Don’t over-process. Transfer to a shallow bowl with parmesan. Season well. Toss to combine.
2.Lightly dust 1 veal steak with flour, then dip in egg, then pine nut mixture. Repeat with each piece of veal. Place on a baking tray. Chill 15 minutes.
3.Heat oil and butter in a frying pan on medium, until butter is foaming. Cook veal 3 minutes each side, until golden and cooked through. Drain on paper towel.
4.Serve veal with lemon wedges, mashed potato and steamed green beans.

Be careful not to over-process your pine nuts in Step 1, or a paste will form.
