1.Heat large oiled frying pan over medium heat. Combine spices, garlic and oil in large bowl; season. Add pork; turn to coat. Cook pork about 5 minutes each side or until cooked. Remove from heat, cover; stand 5 minutes.
2.Meanwhile, combine couscous, the water and butter in medium heatproof bowl, cover; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.
3.Rinse and drain chickpeas; stir chickpeas and spinach through couscous.
4.Slice cucumber into thin batons. Slice pork thickly; serve with couscous, cucumber and tzatziki. Sprinkle over mint; accompany with lemon wedges.
