Ingredients

Method

1.Combine coconut and 1/2 cup boiling water in a heatproof bowl. Cover with plastic food wrap. Stand for 15 minutes or until water has been absorbed.
2.Process coconut mixture and chilli in a food processor until smooth. Set aside.
3.Whisk flour, garam masala and 1 cup water in a bowl until smooth. Stir in onion and peas. Season.
4.Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil).
5.Shallow-fry tablespoon measures of pea mixture, in batches, For 4 minutes or until golden, crisp and cooked. Using a slotted spoon, transfer to paper towels.
6.Serve warm fritters with chilli coconut.

Garam masala is an Indian spice blend in the spice aisle; you can use mild curry powder instead. To shallow-fry, add oil to a depth of 4cm.
