Pastitsio

This Greek-inspired favourite, which is a little like lasagne, will please the whole family.

1.Preheat oven to 180°C. Lightly grease a large oven-proof serving dish. Cook pasta in plenty of boiling, salted water for 10-12 minutes until just al dente. Drain.
2.Heat oil in a large frying pan and sauté onion, garlic, herbs and mince for 4-5 minutes over high heat until meat is browned. Add stock, paste, tomatoes and sugar, then simmer for 8-10 minutes until thick.
3.Beat eggs, then whisk in yoghurt and cheese.
4.Arrange half the pasta over base of dish, spoon on ½ cup yoghurt mix, then add half the mince. Top with remaining pasta, another ½ cup yoghurt mix and the last of the mince. Smooth top and pour over remaining yoghurt. Sprinkle with extra cheese and thyme.
5.Bake for 40-50 minutes until golden and bubbling.
