Pasta with garlic squash

Quick, tasty and packed full of flavour, this beautiful pasta dish is wonderful tossed with tender garlic infused squash and crispy bacon pieces. Serve with crusty bread for a satisfying weeknight dinner.

Method

1.Cook spaghettini in a large saucepan of boiling, salted water according to packet directions. Drain.
2.Meanwhile, heat oil in a large frying pan on high. Add bacon. Cook 2-3 minutes, until brown. Reduce heat to medium, toss through squash and garlic. Cook 6 minutes, until squash is golden and just tender.
3.Add spaghettini, parsley and 1/4 cup parmesan to pan. Toss together 2 minutes, until spaghettini warms through. Top with remaining parmesan. Serve with crusty bread.
