Method
1.Dust fish with flour. Dip into egg and coat in combined breadcrumbs and parmesan. Chill for 15 minutes.
2.For Tomato Relish, heat oil in a saucepan. Sauté onion and garlic 1-2 minutes. Stir in remaining ingredients. Season. Bring to boil, stirring. Reduce heat and simmer for 25-30 minutes until thickened. Cool.
3.Heat oil in a deep pan until a small piece of bread sizzles immediately it is added.
4.Deep-fry fish in batches for 1-2 minutes. Remove with slotted spoon. Drain on paper towel. Serve with lemon, rocket and relish.
